Sally Settle's Salsa! one clove garlic, and one Jalopena pepperchop fine in food processor (or with knife for Y2K compliance) add large handful of cilantro and one can or jar of tomatoes (no need to drain tomatoes)process till it is the consistency you like. That's it! This year I still have fresh cilantro in my garden, but many times I grow cilantro on my windowsill. Peppers are in the grocery store year round. I like this because it tastes fresh year round. If I canned it, it would not taste as good, I think. I would also not can it without adding some vinegar for safety.
