For all bread recipes not requiring a rise period.

 

Maria's Moist Zucchini Bread:

3 eggs 1 cup oil 2 cup sugar 2 tsp. vanilla

Beat the above and then add: 2 cups shredded zucchini 1 8-1/4 Oz. can pineapple, drained Blend in: 3 cups flour 2 tsp. soda 1/2 tsp. baking powder 1 tsp. salt 1-1/2 tsp. cinnamon 3/4 tsp. nutmeg 1 c nuts Bake at 350 deg. for about 1 hour.  If you bake in cup cake tins, bake for about 25 minutes or until toothpick inserted comes out clean.

Oatmeal Raisin Scones  

3 cups flour 2 cups oats 2t baking soda 1t salt 1/2 cup butter/margarine 1 cup raisins 1 1/2 cup sour milk (milk plus 4t vinegar) Mix dry ingredients, cut in butter and raisins.  Add milk and stir to moisten.  Divide dough into 4 portions, pat onto 2 greased cookie sheets, cut into 1/4th (like a pie).  Bake in 400 oven for 10 minutes or until done. We put butter and a little sugar or honey on the scone and enjoy!!  This makes enough for 2 breakfasts.  It freezes great.
