MIX-N-MATCH SKILLET MEALS
Choose ONE food from EACH of the following groups:

BREADS AND CEREALS (1 cup raw)
~ Macaroni
~ Spaghetti
~ Rice (white or brown)
~ Noodles
~ Bulgur
~ Any pasta

SAUCE (1 can soup plus 1.5 cans milk, broth or water)
~ Cream of Mushroom
~ Cream of Celery
~ Cream of Chicken
~ Cream of Potato
~ Tomato Soup
~ French Onion Soup

PROTEIN (1 pound or 1 cup cooked)
~ Chopped beef
~ Chopped pork or ham
~ Ground beef or turkey
~ Chicken
~ Turkey
~ Tuna
~ Salmon
~ Mackerel
~ Cooked dry beans
~ Frankfurters
~ Kielbasa

VEGETABLES (1.5 to 2 cups canned, cooked or raw)
~ Carrots
~ Peas
~ Corn
~ Green beans
~ Lima beans
~ Broccoli
~ Spinach
~ Mixed vegetables
~ Celery
~ Green Pepper
~ Whatever you have around [Mary notes: floor sweepings, or whatever.]

1/2 to 1 cup cheese (any kind) can be stirred into sauce at the end of the cooking time.

1.) Choose one food from each of the four groups above. Stir together in skillet.
2.) Season to taste with salt, pepper, soy sauce, onion flakes, garlic, or whatever spices you enjoy.
3.) Bring to a boil.
4.) Reduce heat to lowest setting. Cover pan and simmer 30 minutes until pasta or rice is tender. Stir occasionally to prevent rice and pasta from sticking. Stir in cheese, if desired. Serve. Makes 4 to 6 servings. To bake in oven: mix all ingredients in casserole dish and cover tightly; bake at 350 F for one hour.

BASIC HAMBURGER MIX: 4 onions, chopped   2 tsp. salt    2 c. celery&tops   4 lb. hamburger   1 tsp. garlic  salt 3 T. worcestershire sauce   1/2 tsp. pepper   2 -12 oz. bottles of catsup   Sauté onions in oil ( don't brown). Add hamburger,  cook till lightly browned. Drain. Add remainder of
ingredients. Simmer in crock.   

SLOPPY JOES: thaw, spread on  buns. 

CHILI CON CARNE: Heat mix with  equal amount of Kidney Beans. Season with chili powder. Top with cheese, corn  chips. 

COMPANY CASSEROLE: Mix 1c.  cottage cheese with 8 oz. cream cheese & 1/4 c. sour cream. Cook 8 oz.  noodles, drain. Butter casserole dish, place half the noodles. Cover with half  the mix, spread cheese mixture over top. Repeat. Bake @350* , 30-40 min. Serves  6. 

TAMALE PIE: In casserole, combine  mix, 1 c. cream corn, 1 chopped gr. pepper, 1 tsp. chili powder, 1 1/2 c. canned  tomatoes & 1c. pitted ripe olives. Stir 1/2 c. cornmeal w/ 1c. milk. Blend  into meat mixture. Bake 375*, 1 hour. serves 6. 

SPAG: Heat. Add 1/2 tsp. Italian  seasoning per 16 oz. mix. Serve over noodles topped w/ cheese. These are easy recipes when you don't have much time or don't know what to fix for dinner! A good way to use up burger. Hope you  can use them!

 Basic Cream of Onion Soup Mix (Makes 1 quart of dry mix)

 1 1/4 cups whole wheat pastry flour

 1 1/4 cups non-instant powdered milk

 2/3 cup dried onion

 2 teaspoons black pepper

 1 teaspoon garlic powder

 1/3 cup dried parsley

 1 teaspoon salt (optional)

 1/3 cup dried parsley

 1 teaspoon salt (optional)

 1/3 cup powdered vegetable broth

 

 In a bowl, combine all ingredients and mix thoroughly. Place in a wide-mouth quart jar, seal tightly and store in cool dark cupboard. Use within two months.

 

 Use this mix to make your basic Cream of Onion Soup ( 1 serving)

 1/4 cup cream of onion Soup Mix

 1 cup of milk

 or I use 1/2 cup of the onion mix to form a concentrate to put into crockpot recipes.

 Basic Cream of Mushroom Soup Mix (make 1 quart mix)

 1 1/2 cups whole wheat pastry flour

 1 1/3 cups not-instant powdered milk

 3/4 cup dried mushrooms (I usually dry my own)

 3 tablespoons dried minced onion

 3 tablespoons dried parsley

 1 teaspoon dried minced garlic

 1 teaspoon salt or salt substitute

 In a bowl, combine all ingredients and mix thoroughly. Place in a wide-mouth quart jar, seal tightly and store in cool dark cupboard. Use within two months.

Again, 1/4 dry mix with 1 cup of milk to make one serving.
